Ingredients

4 medium Baking potatoes, peeled and cut into chunks

1 15-ounce can Low-sodium canned garbanzo beans, drained

½ cup Non-fat milk

¼ cup Parmesan cheese, grated

½ teaspoon Garlic powder

Black pepper to taste

Directions

  1. Wash your hands thoroughly with soap and water. Place the peeled and chunked potatoes in a large saucepan and cover completely with cold water.

  2. Bring the water to a boil over high heat, then reduce the heat to medium and maintain a gentle simmer.

  3. After the potatoes have been cooking for 10 minutes, add the drained garbanzo beans to the pot.

  4. Continue cooking until the potatoes are very tender and easily pierced with a fork, approximately 20 minutes longer.

  5. Drain all the water from the saucepan using a colander, then return the empty saucepan to the stove over low heat.

  6. Add the drained potatoes and beans back to the saucepan. Using a potato masher or hand mixer, mash and blend the mixture until you reach your desired consistency—smooth or slightly chunky, as preferred.

  7. Pour in the milk and stir to combine. Add the grated Parmesan cheese, garlic powder, and black pepper to taste. Mix thoroughly until all ingredients are evenly distributed.

  8. If the mixture has cooled, reheat gently over low heat, stirring occasionally, until warmed through.

  9. Transfer to a serving dish and serve hot as a side dish.
