Ingredients
19½ oz Brownie mix
½ cup Butter, softened
15 oz Pumpkin puree
3 cup Powdered sugar
½ tsp Pumpkin pie spice
½ tsp Vanilla extract
1 tbsp Heavy cream
Caramel topping
Chocolate sprinkles
Directions
Preheat your oven to 350°F. Lightly coat a 12-inch solid-bottom pizza pan with non-stick cooking spray.
Open the can of pumpkin puree and measure out 2 tablespoons to reserve for the frosting later. Combine the remaining pumpkin puree with the dry brownie mix in a large bowl.
Stir the pumpkin and brownie mix together with a sturdy wooden spoon until fully combined and the mixture is thick and wet throughout. Pour the mixture onto the prepared pizza pan and spread evenly to an even thickness.
Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool completely on a wire rack in the pan.
While the brownie pizza cools, place the softened butter in the bowl of your stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 1 to 2 minutes.
Add the powdered sugar, vanilla extract, and pumpkin pie spice to the mixer bowl. Start on low speed until the powdered sugar is moist, then increase to medium speed.
Gradually add the reserved 2 tablespoons of pumpkin puree and the heavy cream while continuing to beat on medium speed for 1 to 2 minutes, until the frosting is light and fluffy.
Once the brownie pizza has cooled completely, spread the pumpkin buttercream frosting evenly over the top. Drizzle with caramel topping and sprinkle chocolate sprinkles over the surface.
Slice and serve. Store any leftovers in an airtight container in the refrigerator.
Comments
This is an easy seasonal riff on a brownie base that plays to autumn's peak in the Carolinas—pumpkin is a natural here. The ingredient list is tight: brownie mix, butter, pumpkin, powdered sugar, cream, and shelf staples are all standard at any Charlotte grocer (Harris Teeter, Food Lion, ALDI, Walmart). Cost runs roughly $12–15 total, about $1.50–2.00 per serving, kept down by the mix base. The stated 45 minutes is honest for baking and frosting; this is genuinely low-fuss and tolerates some hands-off oven time. The real caveat is texture: once frosted it's best the same night, as the pumpkin buttercream softens the brownie edge by the next day, so plan this for a crowd or for eating it fresh rather than as a make-ahead.
