Ingredients

2-3 tablespoons garlic and herb butter or spread

12 oz. raw medium shrimp, thawed, peeled and deveined

2 packets Uncle Ben's Ready Rice in butter and garlic flavor

12 oz. frozen mixed vegetables

Directions

  1. Prepare the rice packets according to package directions while you prepare the shrimp and vegetables.

  2. In a large saucepan over medium-high heat, melt 2 tablespoons of garlic and herb butter.

  3. Add the shrimp to the melted butter and sauté for 1-2 minutes, stirring occasionally, until they begin to turn pink.

  4. Add the frozen mixed vegetables and the remaining 1 tablespoon of garlic and herb butter to the pan.

  5. Continue cooking for 4-6 minutes, stirring gently, until the shrimp are fully opaque and cooked through (internal temperature 145°F) and the vegetables are heated through and tender.

  6. Divide the cooked rice among serving plates and top with the shrimp and vegetable mixture.

  7. Serve immediately while hot.

This hits the sweet spot for a Charlotte weeknight: shrimp is coastal North Carolina's strongest ingredient play, instant rice and mixed vegetables are staples at every major chain, and garlic herb butter costs under $3. The stated 10 minutes is honest if you buy pre-cooked shrimp (standard at Harris Teeter, Food Lion, Publix, and Kroger), though raw shrimp adds 5–6 minutes; clarify which before shopping. The real strength is that it reheats perfectly, feeds four without fuss, and requires zero special stops—every ingredient lives in the basics section of Walmart or ALDI. Only caveat is that fresh herb butter can separate on reheating, so stir gently and add a splash of water if needed.
