Ingredients

13½ ounces Coconut milk

2 teaspoons Matcha green tea powder

2 tablespoons Sweetener (honey, agave nectar, or maple syrup)

Directions

  1. Pour the coconut milk into a medium bowl. Add the matcha powder and sweetener. Whisk vigorously for 2-3 minutes until the matcha powder is fully dissolved and the mixture is smooth and well combined.

  2. Divide the mixture evenly among 6 popsicle molds. Freeze for 30 minutes until the mixture is partially set.

  3. Insert popsicle sticks into the center of each mold. Return to the freezer and freeze for 2-4 hours, or until completely solid.

  4. Run warm water briefly over the outside of the molds to release the popsicles. Remove and serve immediately, or store in the freezer for up to 2 weeks.

Matcha powder is the sticking point: it's not stocked at Harris Teeter, Food Lion, Publix, Walmart, or ALDI in Charlotte—you'll need to make a special trip to an Asian market or order online, which defeats the weeknight appeal. The stated 5 minutes ignores freezing time entirely; expect 4-6 hours minimum for set popsicles, making this a plan-ahead dessert, not a grab-and-go snack. Coconut milk and sweetener are cheap and widely available, so ingredient cost per serving runs under $0.50, but the matcha hunt and freeze time are real commitments. It's a no-fuss formula that works for summer entertaining once you've sourced the powder.
