Ingredients

28 oz Extra-firm tofu, drained and torn into 1-inch pieces

2 tbsp Canola or avocado oil

¼ cup Cornstarch

1½ tbsp Adobo sauce from canned chipotles in adobo, divided

4 clove Garlic cloves, grated, divided

1 tbsp Ground cumin

1 tsp Salt, divided

5 tbsp Lime juice, divided

½ cup Sour cream

3 cup Shredded cabbage

¼ cup Fresh cilantro, chopped

12 count Corn tortillas, warmed

Directions

  1. Pat the torn tofu pieces dry with paper towels to remove excess moisture. This helps them crisp up when fried.

  2. In a small bowl, combine the cornstarch with 1 teaspoon of salt. Toss the tofu pieces in this mixture until evenly coated.

  3. Heat the oil in a large skillet over medium-high heat. Once shimmering, add the cornstarch-coated tofu in a single layer and cook for 8-10 minutes, stirring occasionally, until golden and crispy on multiple sides.

  4. In a small bowl, whisk together 1 tablespoon of adobo sauce, 3 grated garlic cloves, and 1 tablespoon of ground cumin. Add 2 tablespoons of lime juice to create a marinade.

  5. Pour the adobo-garlic mixture over the crispy tofu, tossing gently to coat. Cook for 2-3 minutes more until the tofu is well-coated and fragrant.

  6. In a small bowl, mix the sour cream with the remaining ½ tablespoon of adobo sauce, 1 grated garlic clove, and 3 tablespoons of lime juice to create a crema.

  7. In another bowl, toss the shredded cabbage with the chopped cilantro and a pinch of salt.

  8. Warm the corn tortillas in a dry skillet or over an open flame for about 30 seconds per side.

  9. To serve, place a portion of the crispy chipotle tofu in each warm tortilla, top with the cabbage slaw, drizzle with the lime crema, and serve immediately.

Tofu is readily available at Harris Teeter, Food Lion, and Kroger, making ingredient sourcing straightforward at most Charlotte chains, though adobo sauce may require a Kroger or specialty stop if your Food Lion doesn't stock it—budget $15–18 total for six servings, roughly $2.50–3.00 per person, kept lean by the pantry staples. The 45-minute stated time is honest for pan-frying tofu and assembling tacos, though pressing tofu takes an extra 15 minutes if you're not using a press, making the real prep closer to an hour for first-timers. This is a weeknight-friendly dish that holds together on the plate and reheats well the next day, though the sour cream-dressed slaw is best fresh; skip the caveat about fussiness since pressing and pan-frying are straightforward once you've done it once.
