2 tablespoons All-purpose flour
2 tablespoons Water
1 cup Low-sodium chicken broth
1 cup Cooked and diced chicken
¼ teaspoon Salt
0.06 teaspoon Black pepper
⅓ cup All-purpose flour (for dumplings)
½ teaspoon Baking powder
¼ teaspoon Salt (for dumplings)
2 tablespoons Non-fat milk
Directions
In a small bowl, whisk together 1/3 cup flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Add 2 tablespoons non-fat milk and stir until just combined into a thick batter. Set the dumpling mixture aside.
Pour the chicken broth into a saucepan and bring to a boil over medium-high heat.
In a separate small bowl, create a slurry by mixing 2 tablespoons flour with 2 tablespoons water until smooth and lump-free.
Slowly pour the flour slurry into the boiling broth while stirring constantly to prevent lumps from forming. Continue stirring until the broth thickens slightly, about 1-2 minutes.
Add the cooked diced chicken, 1/4 teaspoon salt, and a dash of black pepper to the broth. Stir well and bring the mixture back to a gentle simmer.
Using a small spoon or melon baller, carefully drop spoonfuls of the dumpling batter into the simmering broth. Work gently to avoid splashing.
Allow the dumplings to cook for approximately 8-10 minutes, until they float to the surface and are cooked through. They should be light and tender when done.
Taste the broth and adjust seasoning as needed. Divide between two bowls and serve hot.
