Ingredients
4 medium sweet potatoes (about 1 lb total)
3 large egg whites
1/2 cup granulated sugar
1 can (12 oz) nonfat evaporated milk
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Rinse the sweet potatoes under cold running water, scrubbing gently to remove any dirt. Pierce each potato several times with a fork.
Arrange the pierced sweet potatoes on a microwave-safe plate. Microwave on full power for about 15 minutes, turning them over halfway through cooking, until they are very tender when pierced with a knife.
Preheat the oven to 400°F while the potatoes cook.
Once the sweet potatoes are cool enough to handle, carefully peel away the skin and place the cooked flesh in a large bowl.
Using hand beaters or a food processor, mash or blend the sweet potato until completely smooth with no lumps.
Add the egg whites, sugar, evaporated milk, vanilla extract, cinnamon, nutmeg, and ginger to the mashed sweet potato.
Mix all ingredients together until the mixture is completely smooth and well combined. There should be no streaks of unmixed ingredients.
Pour the mixture into an 8-inch baking dish, spreading it evenly.
Place the baking dish in the preheated 400°F oven and bake for approximately 40 minutes, until the casserole is firm in the center and a knife inserted in the middle comes out clean.
Remove the casserole from the oven and let it stand for 5 minutes to set.
Cut the casserole into 10 equal squares and serve hot.
Store any leftover portions in an airtight container in the refrigerator for up to 3 days.
