1 1/2 cups water

Kosher salt and freshly ground black pepper, to taste

1 cup shredded cheddar cheese

2 tablespoons chopped fresh cilantro leaves

Directions

  1. Heat the olive oil in a large saucepan or pot over medium-high heat.

  2. Add the minced garlic, diced onion, and diced red bell pepper to the pot. Cook, stirring frequently, until the onion becomes translucent, about 2 to 3 minutes.

  3. Stir in the diced zucchini and corn kernels, cooking until they soften and heat through, approximately 2 minutes.

  4. Pour in the undrained canned diced tomatoes and add the uncooked white rice, chili powder, cumin, and water. Stir everything together to combine. Season with kosher salt and freshly ground black pepper to your taste.
