Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 1/2 cups packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup quick-cooking oatmeal
12 ounces semi-sweet chocolate chips
Directions
In a large mixing bowl, cream together the softened butter and brown sugar. Beat on medium speed for about 5 minutes until the mixture is light and fluffy, scraping down the sides of the bowl as needed.
Add the eggs one at a time to the butter mixture, mixing well after each addition to fully incorporate.
Stir in the vanilla extract and ground cinnamon until evenly combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the flour mixture to the butter mixture one cup at a time, mixing gently after each addition and scraping down the bowl sides to ensure all ingredients are incorporated.
Mix in the oatmeal until fully distributed throughout the dough. Fold in the chocolate chips until evenly dispersed.
Preheat your oven to 350°F (175°C). Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them at least 2 inches apart to allow for spreading during baking.
Bake for 9 to 10 minutes, or just until the edges of the cookies begin to turn light golden brown. The centers may appear slightly underdone, which will result in chewy cookies.
Remove the baking sheet from the oven and allow the cookies to rest for 5 minutes on the hot sheet. This helps them set and firm up slightly. Transfer the cookies to a wire cooling rack and let them cool completely.
