Ingredients
4 cups Raw almonds
½ teaspoon Salt
½ teaspoon Ground cinnamon
2 whole Vanilla beans, finely chopped (optional)
Directions
Preheat your oven to 350°F.
Spread 2 cups of raw almonds in a single layer across a large baking sheet, ensuring they are evenly distributed.
Toast the almonds in the preheated oven for 15 minutes, stirring and shaking the pan every few minutes to promote even toasting and prevent burning.
Remove the baking sheet from the oven and allow the toasted almonds to cool to room temperature until they can be handled comfortably with your bare hands, approximately 5-10 minutes.
Transfer the cooled toasted almonds to the bowl of a food processor, then add the remaining 2 cups of raw almonds, salt, ground cinnamon, and the finely chopped vanilla beans if using.
Process the mixture for 10 to 15 minutes, pausing periodically to scrape down the sides of the bowl. Continue processing until the almond butter reaches a smooth, creamy consistency with an almost liquid texture. The natural oils released from the almonds will transform the mixture from a dry flour-like texture into a rich, spreadable butter.
Transfer the warm almond butter to clean, airtight glass jars while still slightly warm, then allow it to cool completely to room temperature. The butter will firm up naturally as it cools and settles.
Store the jars in a cool, dry place away from direct sunlight. The almond butter will keep for up to 3 months.
