Ingredients

1 1/2 cups chocolate chips

1/4 cup almond milk

1/2 cup cookie butter or nut butter

Directions

  1. Fill a medium saucepan with water and bring it to a boil over high heat.

  2. Place a glass bowl on top of the saucepan, creating a double boiler. Add the chocolate chips and almond milk to the bowl.

  3. Stir constantly until the chocolate is completely melted and smooth. While the chocolate melts, line a muffin pan with muffin liners (silicone liners work especially well).

  4. Spoon a small amount of the melted chocolate into the bottom of each muffin cup, enough to coat the bottom.

  5. Place the muffin pan in the freezer for about 5 minutes to allow the bottom chocolate layer to firm up slightly.

  6. Once the bottom layer is set, place a spoonful of cookie butter or nut butter into the center of each cup, flattening it slightly with your hand or the back of a spoon.

  7. Divide the remaining melted chocolate evenly among the cups, pouring it over the cookie butter layer and filling to the top. Smooth the tops if needed.

  8. Return the muffin pan to the refrigerator for at least 1 hour, or until the chocolate is completely set and firm.

  9. Once set, remove the chocolate cups from the muffin liners and serve. Store in the refrigerator in an airtight container.
