Ingredients
2 cups Fresh mint leaves, packed
½ cup Capers, drained and rinsed
¼ cup Minced shallots
¼ cup Fresh lemon juice
2 teaspoons Finely grated lemon zest
½ cup Extra-virgin olive oil
Directions
Rinse the drained capers under cold water to remove excess salt, then pat dry and set aside.
Coarsely chop the fresh mint leaves and place them in a bowl.
Add the dried capers and minced shallots to the mint.
Pour in the fresh lemon juice and add the grated lemon zest. Stir to combine.
Slowly drizzle in the extra-virgin olive oil while stirring gently until the sauce is emulsified and well blended.
Taste and adjust seasonings as desired. Transfer to a serving bowl and serve immediately or refrigerate until ready to use.
