Ingredients
1 lb. red potatoes, washed and quartered
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
2 tablespoons brown sugar
2 tablespoons fig preserves
2 tablespoons maple syrup
3 tablespoons mayonnaise
Directions
Preheat your oven to 425°F (220°C).
In a large bowl, toss the quartered red potatoes with olive oil until evenly coated.
Season the potatoes generously with salt and freshly ground black pepper to your taste.
Spread the seasoned potatoes in a single layer on a greased baking sheet or roasting pan.
Roast in the preheated oven for 15-20 minutes. Check the potatoes for tenderness by piercing with a fork; they should be beginning to soften. If needed, return to the oven for another 10-15 minutes until the potatoes are golden and fully tender on the inside with slightly crispy edges.
While the potatoes roast, prepare the maple fig sauce. In a small bowl, combine the brown sugar, fig preserves, maple syrup, and mayonnaise.
Whisk the sauce ingredients together until smooth and well blended. Refrigerate the sauce until you are ready to serve.
Transfer the roasted potatoes to a serving platter. Drizzle with the chilled maple fig sauce or serve it on the side for dipping.
