1 Prepared dairy-free pie crust
7 Apples, peeled, cored, and sliced
1 teaspoon Lemon juice
¼ cup Dairy-free margarine
3 tablespoons All-purpose flour
¼ cup Peanut butter
¾ cup Rolled oats
Directions
Preheat your oven to 350°F. Prepare and bake the dairy-free pie crust according to the package or recipe directions until lightly golden. In a large mixing bowl, combine the sliced apples with the lemon juice, stirring gently to coat. Spoon this apple mixture evenly into the baked pie crust.
In a separate medium bowl, combine the dairy-free margarine, all-purpose flour, peanut butter, and rolled oats. Using a pastry blender, fork, or your fingertips, work the mixture together until it resembles coarse breadcrumbs with pea-sized pieces throughout.
Distribute the crumble mixture evenly over the apple filling. Do not be concerned if the topping appears thick and generous—the apples will soften and settle as they bake, creating a well-balanced pie. Carefully cover the outer edges of the crust with aluminum foil to prevent over-browning.
Bake in the preheated oven for 40 to 50 minutes. About 15 minutes before the pie is finished baking, remove the foil to allow the crumble topping to brown slightly. The pie is ready when the apples are tender when pierced with a fork and the crumble is lightly golden.
