450 g Lean ground beef
2 Garlic cloves, crushed
1 Red chilli, finely chopped
1 Small onion, finely diced
2 Spring onions, sliced
1 handful Fresh basil leaves, chopped
1 Egg, lightly beaten
1 tsp Ketchup
1 tsp Mustard

Directions
Place the lean ground beef in a large mixing bowl and break it apart with a fork to separate any clumps. Add a pinch of salt and massage the mixture thoroughly with your hands until it becomes soft and uniform, ensuring the salt is fully distributed throughout. Cover with plastic wrap and allow to rest at room temperature for 25 minutes.
While the meat rests, prepare the spicy sauce by combining the ketchup and mustard in a small bowl. Mix well and set aside.
After the resting period, gently fold the crushed garlic, finely chopped red chilli, diced onion, sliced spring onions, chopped basil, and lightly beaten egg into the seasoned beef mixture. Mix until just combined, being careful not to overwork the meat.
Divide the meat mixture into two equal portions. Pat each portion firmly between your hands or on a clean surface to form two thick patties approximately 4½ inches in diameter. You can use a small bowl or saucer as a guide for consistent shape.
Heat a non-stick frying pan over medium-high heat and add a light coating of olive oil. Place the beef patties in the hot pan and cook for 3-4 minutes on the first side until well browned. Flip carefully and cook the second side for 3-4 minutes until browned and the internal temperature reaches 160°F (71°C), ensuring the burgers are cooked through.
Remove the burgers from the pan and allow to rest for 2 minutes. Spread the prepared spicy sauce on toasted buns if desired, place each burger on a bun, and serve with your choice of fresh toppings such as lettuce, tomato, or additional herbs.
