1 refrigerated pre-made pie crust, at room temperature
5 large eggs
¼ cup shredded hash browns
¼ cup diced red or yellow bell pepper
2 green onions, thinly sliced, divided
¾ cup shredded mozzarella cheese, divided
5 grape tomatoes, halved
Salt and black pepper, to taste
Directions
Preheat your oven to 375°F. Remove the pie crust from refrigeration and allow it to come to room temperature according to package directions. In a large mixing bowl, crack the eggs and whisk them together until well combined. Add the shredded hash browns, diced bell pepper, most of the sliced green onions (reserving some for garnish), and a pinch of salt and black pepper to taste. Stir the mixture gently until all ingredients are evenly distributed, then set the bowl aside.
Carefully unroll the pie crust and transfer it to a 9-inch pie pan. Gently press the crust into the bottom and up the sides of the pan, then use a fork to lightly poke small holes across the bottom to prevent bubbling during baking. Crimp or flute the edges if desired for a finished appearance. Sprinkle half of the shredded mozzarella cheese (about ½ cup) evenly across the bottom of the crust.
Slowly pour the egg and vegetable mixture over the cheese layer, spreading it evenly. Arrange the halved grape tomatoes in a circular pattern around the outer edge of the pie. Sprinkle the remaining ¼ cup of mozzarella cheese over the top, and finish with the reserved sliced green onions scattered across the surface.
Place the pie in the preheated 375°F oven and bake for approximately 30 minutes, or until a knife inserted into the center comes out clean and the egg is set to 160°F internal temperature. The top should appear lightly golden and the filling should be firm to the touch. Remove from the oven and let cool for a few minutes before slicing and serving.
