Vegetable oil for preparing the baking sheet

1 large egg white

3 tablespoons sugar

1 tablespoon Cajun seasoning

2 cups pecan halves

  1. Preheat your oven to 250°F. Lightly brush or wipe vegetable oil over a rimmed baking sheet to prevent sticking.

  2. In a medium bowl, whisk together the egg white, sugar, and Cajun seasoning. Continue whisking until the mixture is well combined and develops a light, foamy texture.

  3. Add the pecan halves to the egg white mixture and toss thoroughly until every piece is evenly coated with the seasoning mixture.

  4. Spread the coated pecans in a single layer on the prepared baking sheet. Bake for 45 minutes, stirring the nuts every 15 minutes to ensure even roasting and prevent burning.

  5. The pecans are ready when they become fragrant and appear slightly darker in color, though they should still feel a bit moist to the touch. They will continue to crisp and harden as they cool.

  6. Remove from the oven and allow the pecans to cool completely on the baking sheet. Once fully cooled, transfer to an airtight container where they will keep fresh for up to 5 days.
