Black Bean Veggie Burgers

Hearty and satisfying plant-based burgers made with black beans, refried beans, and fresh vegetables. These patties are baked until crispy on the outside and tender within, then topped with creamy avocado slices, fresh cilantro, and a squeeze of lime juice.

Ingredients
15½ ounces Black beans, drained and rinsed
½ cup Refried beans
½ Onion, finely minced
1 Red bell pepper, finely minced
1 tablespoon Cuban seasoning
¾ cup Bread crumbs
1 Egg
1 Avocado, pitted, peeled and sliced
1 Lime
4 Burger buns
Fresh cilantro, optional
Non-stick cooking spray
Directions
Preheat your oven to 375°F (190°C).
Line a rimmed baking sheet with aluminum foil and lightly coat with non-stick cooking spray.
In a medium bowl, combine the drained and rinsed black beans with the refried beans. Using a fork, partially mash the mixture until some beans are broken down but some whole pieces remain.
Add the minced onion, minced red bell pepper, and Cuban seasoning to the bean mixture. Stir well to combine all ingredients.
Add the bread crumbs and egg to the bean mixture. Mix thoroughly until the mixture is well combined and holds together.
Spray a 1/2 cup measuring cup with non-stick cooking spray. Using the measuring cup, scoop out 4 equal portions of the mixture onto the prepared baking sheet. Flatten each portion with your hands to form patties about 1/2 inch thick.
Bake the patties for 10 minutes. Remove the baking sheet from the oven and carefully flip each patty.
Return to the oven and bake for an additional 5 minutes until the patties are golden and firm.
Toast the burger buns lightly if desired. Place each baked patty on the bottom half of a bun.
Top each burger with 2 slices of avocado, a squeeze of fresh lime juice, fresh cilantro if using, and the top bun. Serve immediately.
