Ingredients

2 cups thinly sliced red onions

2 tablespoons red wine vinegar

1 teaspoon sugar

Salt and pepper to taste

4 large soft whole grain rolls

1/2 cup crumbled blue cheese

12 tomato slices

8 ounces thinly sliced roast beef

2 cups packed small watercress sprigs

Directions

  1. In a medium bowl, combine the sliced red onions, red wine vinegar, and sugar. Season with salt and pepper to taste. Gently toss to coat the onions evenly. Let the mixture sit at room temperature, stirring occasionally, for at least 1 hour and up to 4 hours, until the onions have softened and the flavors have melded together.

  2. Toast the whole grain rolls until lightly golden and crispy on the inside.

  3. Place the bottom halves of the toasted rolls on a clean work surface. Divide the crumbled blue cheese evenly among the four roll bottoms, sprinkling it as a base layer.

  4. Top each roll bottom with 3 tomato slices, arranging them in a single layer.

  5. Divide the roast beef evenly among the four sandwiches, layering approximately 2 ounces per sandwich on top of the tomatoes.

  6. Add approximately 1/2 cup of the watercress sprigs on top of the roast beef on each sandwich.

  7. Using a slotted spoon, drain the pickled onions and divide them evenly among the four sandwiches, distributing about 1/2 cup of onions on each.

  8. Place the toasted roll tops over the fillings to close each sandwich.

  9. Cut each sandwich in half diagonally and serve immediately.
