Ingredients
1/2 cup granulated sugar
1/4 cup water
2 cups fresh pineapple juice
4 small fresh mint sprigs, for garnish
Directions
In a small saucepan, combine sugar and water. Place over medium-high heat and bring to a simmer, stirring once or twice until the sugar is completely dissolved. Remove from heat and let cool slightly.
Whisk the pineapple juice into the cooled sugar syrup until well combined.
Pour the pineapple mixture into a 9 x 9 x 2-inch freezer-safe pan and place in the freezer.
Every 30 minutes, remove the pan from the freezer and vigorously scrape the mixture with a fork, breaking up any ice crystals that have formed and pulling the frozen edges toward the center. Return to the freezer after each scraping.
Continue this scraping process for 2 to 3 hours, until the entire mixture has frozen into light, fluffy ice granules.
Divide the granita into chilled glasses and garnish each serving with a sprig of fresh mint. Serve immediately.
