Ingredients

2 cups vanilla almond milk

½ cup chia seeds

¼ cup sweetened shredded coconut

¼ cup toasted slivered almonds

4 teaspoons sugar, divided (optional)

Directions

  1. Pour the vanilla almond milk into a large mixing bowl or pitcher.

  2. Add the chia seeds to the almond milk and stir well to combine, ensuring no clumps form.

  3. Fold in half of the sweetened shredded coconut, reserving the remainder for topping.

  4. If desired, add the sugar and stir until fully dissolved.

  5. Divide the mixture evenly among four serving glasses or bowls.

  6. Cover and refrigerate for at least 2 hours, or until the pudding reaches your desired thickness as the chia seeds absorb the liquid.

  7. Before serving, stir each portion if needed, then top with the toasted slivered almonds and remaining sweetened coconut flakes.

  8. Serve chilled and enjoy immediately.
