2 whole fish, cleaned and gutted
2 cloves garlic, crushed
3 small pieces fresh ginger, crushed
1 tablespoon black pepper

Continue frying the fish, turning them gently once halfway through cooking, until both fish are golden brown and crispy on all sides. This should take approximately 8-10 minutes total. The fish is done when the flesh is opaque and flakes easily when tested with a fork. Ensure the thickest part of the fish reaches an internal temperature of 145°F (63°C).
Remove the fried fish from the oil using the slotted spatula and transfer to a paper towel-lined plate to drain any excess oil. Serve hot.
