Ingredients

1 Spanish mackerel fillet

2 tbsp Sugar

2 tbsp Miso paste

2 tbsp Japanese cooking wine (sake)

2 tbsp Water

3 slices Fresh ginger, thinly sliced

Directions

  1. In a microwave-safe dish, whisk together the sugar, miso paste, sake, and water until well combined. Distribute the sliced ginger evenly across the bottom of the dish.

  2. Score the mackerel fillet along the spine side with a shallow notch. If the fillet is large, cut it in half. Place the fillet on top of the ginger mixture with the skin side facing up. Spoon the miso mixture over the flesh side of the fish.

  3. Cover the dish with microwave-safe plastic wrap and microwave on 500W for 5 minutes, until the fish is cooked through and flakes easily when tested with a fork (internal temperature should reach 145°F).

  4. Carefully remove the plastic wrap and spoon the miso sauce over the fish once more. Serve immediately while hot.
