Ingredients
1 small onion, finely chopped
2 tablespoons corn oil
6 cups shredded greens (approximately 1 pound)
16 okra pods, trimmed
4 chili peppers, finely chopped and crushed
1/4 cup water
1 lemon, juiced
Directions
Thoroughly wash your hands with soap and clean running water before beginning food preparation.
Heat the corn oil in a large, heavy-bottomed pan or skillet over medium heat. Add the chopped onion and sauté, stirring frequently, until the onion becomes soft and develops a light golden-brown color, approximately 4 to 5 minutes.
Add the shredded greens, okra pods, crushed chili peppers, and water to the pan with the sautéed onion. Stir well to combine all ingredients evenly.
Reduce the heat to low, cover the pan with a lid, and allow the mixture to simmer gently. Cook for 15 to 20 minutes, stirring occasionally, until the greens are completely tender and the okra is soft when pierced with a fork.
Remove the pan from heat and squeeze the fresh lemon juice over the top of the dish. Toss gently to distribute the lemon juice throughout. Taste and adjust seasoning if desired before serving.
