Ingredients
300 g Frozen peas, thawed at room temperature
3 tbsp Low-fat natural yogurt
2 tbsp Fresh mint, chopped
Fresh mint leaves, torn, for garnish
½ Lemon, zest and juice
Salt and freshly ground black pepper to taste
15 slices Thin baguette, sliced into 15 pieces
85 g Feta cheese, crumbled
drizzle Extra virgin olive oil
Directions
Lightly toast the baguette slices until they are golden and crispy. Set aside on a serving plate.
In a bowl, combine the thawed peas, yogurt, chopped mint, lemon zest, and lemon juice.
Mash the mixture vigorously with a potato masher until you reach your desired consistency—chunky or smooth, to your preference.
Season the pea mixture generously with salt and freshly ground black pepper.
Divide the pea mixture evenly among the toasted baguette slices, spreading it generously on top of each slice.
Scatter crumbled feta cheese over each toast and grind a little extra black pepper on top.
Garnish the toasts with torn mint leaves and drizzle lightly with olive oil.
