Ingredients

3 tablespoons (30g) fine bulgur

3 medium (600g) firm ripe tomatoes, diced into small cubes

2 (50g) spring onions or scallions, trimmed and very thinly sliced

14 ounces (400g) flat-leaf parsley, leaves washed and dried with stalks discarded

2 cups (20g) fresh mint leaves, washed and dried

¼ teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon finely ground black pepper

salt to taste

1 (or to taste) lemon juice

⅔ cup (150ml) extra virgin olive oil

4 gem lettuce heads, washed and quartered

Directions

  1. Rinse the bulgur under cold running water in several changes until the water runs clear. Drain thoroughly in a fine-mesh strainer, then transfer to a bowl. Use a fork to stir and fluff the bulgur occasionally as it absorbs moisture and becomes tender.

  2. While the bulgur is resting, cut the tomatoes into small, uniform dice. Place the diced tomatoes in a separate bowl to collect their juices.

  3. Using a sharp knife, carefully slice the parsley and mint leaves into very thin, delicate strips. Handle the herbs gently to prevent bruising—do not use a mezzaluna or food processor, as this will damage the leaves and darken them.

  4. Strain the tomatoes, discarding most of the collected juice. Transfer the drained tomatoes to a large mixing bowl. Add the sliced spring onions and herb strips.

  5. Sprinkle the fluffed bulgur over the herb and vegetable mixture. Add the ground cinnamon, allspice, and black pepper. Season with salt to taste.

  6. Pour in the lemon juice and olive oil. Toss everything together gently but thoroughly, ensuring all ingredients are well combined and evenly coated. Taste and adjust the lemon juice, olive oil, salt, and spices as needed.

  7. Serve immediately while the salad is fresh and the herbs are at their peak flavor. Arrange the quartered gem lettuce leaves alongside or on the side for guests to use as edible wrappers.
