Ingredients

1 pound Chicken breast thin slices

2 large Eggs

2 cup Breadcrumbs

½ tsp Salt

1 whole Lemon

2 cup Corn oil

Directions

  1. Pat the chicken breast thin slices dry with paper towels and season them lightly with salt on both sides.

  2. In a shallow bowl, beat the eggs until well combined. Pour the breadcrumbs into another shallow bowl.

  3. Dip each chicken slice into the beaten egg, coating both sides, then immediately dredge in the breadcrumbs, pressing gently to adhere. Place the breaded strips on a clean plate.

  4. Heat the corn oil in a large skillet over medium-high heat until it reaches about 350°F (approximately 2–3 minutes).

  5. Carefully place the breaded chicken strips into the hot oil and fry for 3–4 minutes per side until they reach an internal temperature of 165°F and are golden brown and crispy.

  6. Transfer the cooked chicken strips to a paper towel-lined plate to drain excess oil.

  7. Cut the lemon into wedges. Serve the warm fried chicken strips with fresh lemon wedges on the side.

This is a genuinely straightforward weeknight recipe built on ingredients every Charlotte grocery carries—chicken breast, eggs, breadcrumbs, salt, lemon, and corn oil are standard at Harris Teeter, Food Lion, Walmart, ALDI, and Kroger without a second thought. The thirty-minute claim is honest: you're looking at ten minutes to pound and bread the chicken, fifteen to fry, plus five to rest and finish with fresh lemon. At roughly $1.50 to $2.00 per serving for chicken breast and oil, this is a family-friendly budget meal that reheats adequately in a 350-degree oven if there are leftovers. The frying itself is straightforward and does not demand constant attention—you can prepare a side while it cooks.
