Ingredients

2½ pounds Strawberries, washed and hulled

1 cup Sugar

2 teaspoons Lemon juice

½ teaspoon Kosher salt

Directions

  1. Combine the hulled strawberries and sugar in a blender or food processor. Pulse until the mixture reaches a smooth purée, scraping down the sides as needed.

  2. Strain the strawberry purée through a fine-mesh sieve into a bowl, pressing gently on the solids to extract as much liquid as possible. Discard the seeds and pulp.

  3. Stir the lemon juice and kosher salt into the strained strawberry mixture. Taste and adjust the lemon juice and salt to your preference.

  4. Pour the mixture into a shallow freezer-safe container and freeze for about 30 minutes until it begins to firm at the edges.

  5. Stir the partially frozen mixture with a fork, breaking up any ice crystals, and return to the freezer. Repeat this process every 30 minutes for about 2-3 hours until the sorbet reaches a smooth, creamy consistency.

  6. Once fully frozen and scoopable, transfer the sorbet to an airtight container and store in the freezer until ready to serve. Scoop and serve immediately.
