Baked Salmon in Foil with Chorizo and Cheese

Pan-seared salmon fillets are wrapped in foil with Spanish chorizo and melted cheese, then baked until the fish is tender and flaky. The foil packet traps steam and flavors, creating a simple yet elegant main course ready in under 30 minutes.

Ingredients
4 fillets Salmon fillets (about 6 oz each)
6 oz Spanish chorizo, thinly sliced
1 cup Cheddar cheese, shredded
2 tablespoons Olive oil
1 Lemon, sliced
4 sprigs Fresh thyme sprigs
Sea salt and black pepper to taste
Directions
Preheat your oven to 400°F (200°C). Tear off four large sheets of heavy-duty aluminum foil, about 12 inches by 16 inches each.
Lightly brush the center of each foil sheet with olive oil to prevent sticking.
Place one salmon fillet skin-side down on the oiled center of each foil sheet. Season the salmon with salt and pepper.
Arrange the chorizo slices over the top of each salmon fillet.
Divide the shredded cheddar cheese evenly among the four packets, sprinkling it over the chorizo.
Top each packet with a lemon slice and a sprig of fresh thyme.
Fold the foil up and around the salmon to create a sealed packet, leaving a little room for steam to circulate inside.
Place the packets on a baking sheet and bake for 15–18 minutes, until the salmon is opaque and flakes easily when tested with a fork (internal temperature should reach 145°F).
Carefully open the foil packets (steam will be hot) and serve directly in the foil or transfer to serving plates.
