2 pounds boneless short ribs or 4 pounds English-cut short ribs
Kosher salt
Freshly ground black pepper
Directions
Preheat your grill to medium-high heat, approximately 400°F. Allow it to heat for 10 minutes until the grates are very hot.
Pat the short ribs dry with paper towels to remove excess moisture, which helps achieve a better sear.
Season both sides of each short rib generously with kosher salt and freshly ground black pepper just before grilling.
Place the ribs directly on the hot grill grates. Cook for 4–5 minutes per side without moving them frequently, allowing a flavorful crust to develop.
Check for doneness using an instant-read meat thermometer, inserting it into the thickest part of the meat without touching bone. Short ribs are ready when they reach an internal temperature of 145°F.
Transfer the grilled short ribs to a cutting board or serving platter and rest for 5 minutes before serving to allow juices to redistribute.
