Ingredients
3 lbs fresh peaches, cored and cut into 3/4-inch thick wedges
1 Tbsp fresh lemon juice
1/4 cup granulated sugar
2 Tbsp all-purpose flour
3/4 cup old-fashioned oats
3/4 cup packed light-brown sugar
1/4 tsp salt
3/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground ginger
10 Tbsp unsalted butter, cold and cut into 1/2-inch cubes
1/2 cup chopped pecans
Directions
Preheat your oven to 350°F. Prepare a 3-quart baking dish by lightly buttering the bottom and sides.
Place the prepared peach wedges in a large mixing bowl and drizzle with fresh lemon juice. Toss gently to coat.
Sprinkle the granulated sugar and all-purpose flour over the peaches and toss until evenly coated. Transfer the mixture to the prepared baking dish and spread in an even layer.
In a separate mixing bowl, whisk together the oats, salt, ground cinnamon, nutmeg, and ginger.
Add the packed brown sugar to the oat mixture and stir well, using your fingertips to break up any clumps of brown sugar.
Add the cold butter cubes to the mixture. Using your fingertips, gently rub and pinch the butter into the oat mixture until no visible pieces of butter remain and the mixture resembles coarse breadcrumbs with small clumps.
Fold in the chopped pecans, tossing several times until they are distributed throughout the crumble topping.
Sprinkle the crumble mixture evenly over the peaches in the baking dish, breaking up any large clumps as needed.
Bake in the preheated oven for 38 to 42 minutes, until the topping is golden brown and the peach juices are bubbling around the edges of the dish.
Remove from the oven and let cool for a few minutes. Serve warm with vanilla ice cream or sweetened whipped cream if desired.
