2 Fresh ripe mangoes

2 cups Plain lactose-free kefir

¼ cup Aloe vera juice

2 tablespoons Organic extra virgin coconut oil, melted

2 tablespoons Raw honey

Directions

  1. Prepare the mangoes: Cut off the top and bottom of each mango, then stand it upright on the wider flat base. Using a sharp chef's knife, carefully peel away the skin by running the blade along the curved edges, rotating the fruit clockwise as you work until all the skin is removed.

  2. Remove the mango flesh on both sides of the elongated pit by slicing along the pit's outline. Trim any remaining fruit from the pit and around the edges, then roughly chop all the mango flesh.

  3. Add the chopped mango, kefir, aloe vera juice, melted coconut oil, and raw honey to a food processor or blender.

  4. Blend on high speed until the mixture is completely smooth and creamy, 1–2 minutes.

  5. Pour the lassi evenly into four 10-ounce glasses. Refrigerate until chilled and serve cold.
