Ingredients

2 tablespoons butter, cut into pieces

2 slices hearty white bread

2 slices American, Cheddar, or Jack cheese

1/2 cup kimchi, drained and roughly chopped

1/4 teaspoon kosher salt

Directions

  1. Drain the kimchi well and chop it into roughly 1/2-inch pieces. Set aside.

  2. Heat a large skillet over medium-low heat. Place one piece of butter on the skillet and let it melt slightly.

  3. Place one slice of bread on the buttered skillet. Once the bottom begins to turn golden (about 1-2 minutes), flip the bread to the other side.

  4. Immediately place one slice of cheese on the freshly buttered side of the bread. Spread half of the chopped kimchi on top of the cheese.

  5. Butter the second slice of bread on one side and place it butter-side down on top of the kimchi. Press gently to bring the sandwich together.

  6. Cook until the bottom bread slice is golden brown and crispy, about 2-3 minutes. Flip carefully and cook the other side until golden and the cheese is fully melted inside, about 1-2 minutes longer.

  7. Transfer to a cutting board, sprinkle with salt, slice in half, and serve warm. Repeat with remaining ingredients to make the second sandwich.
