Ingredients

1/2 cup fresh spring peas, shelled and rinsed

1 small egg

3 tablespoons milk or cream

1/3 cup all-purpose flour

6 tablespoons panko or fresh breadcrumbs

1 teaspoon Creole or all-purpose seasoning

Vegetable oil for deep frying

Directions

  1. In a small bowl, whisk together the egg and milk until well combined.

  2. In another bowl, combine the all-purpose flour with the Creole seasoning, mixing thoroughly.

  3. In a third bowl, combine the panko breadcrumbs with the remaining Creole seasoning, mixing well.

  4. Working in batches, toss the fresh peas in the seasoned flour until lightly coated, shaking off excess.

  5. Dip the floured peas into the egg mixture, allowing excess to drip off.

  6. Roll the wet peas in the seasoned breadcrumbs until completely covered, pressing gently so the coating adheres.

  7. Heat vegetable oil to 350°F in a deep saucepan or Dutch oven.

  8. Carefully add the breaded peas to the hot oil in small batches, being careful not to overcrowd the pan. Fry for 1 to 2 minutes, stirring gently, until golden brown and crispy.

  9. Using a slotted spoon, transfer the fried peas to a paper towel-lined plate to drain excess oil.

  10. Serve warm as a starter, seasoning with additional salt if desired.
