This mixed-grain loaf uses a blend of all-purpose and whole wheat flour for a hearty, wholesome bread with a tender crumb and golden-brown crust.

Ingredients

2 cups All-purpose flour

1 cup Whole wheat flour

3 tablespoons Nonfat powdered milk

3 tablespoons Sugar

1 teaspoon Salt

1 tablespoon Rapid-rise yeast

3 tablespoons Vegetable oil

1 cup Warm water (120–130 °F)

Directions

  1. Wash your hands thoroughly with soap and warm water.

  2. Pour the all-purpose flour, whole wheat flour, rapid-rise yeast, sugar, salt, and nonfat powdered milk into a one-gallon resealable freezer bag.

  3. Gently squeeze air out of the upper part of the bag and seal it completely.

  4. Shake the sealed bag vigorously and work it with your fingers for about a minute to evenly blend all dry ingredients together.

  5. Open the bag and add the vegetable oil and warm water (120–130 °F) to the dry mixture.

  6. Reseal the bag, pressing out excess air as you do.

  7. Work the bag with your hands and fingers, squeezing and kneading the dough through the plastic for 3–4 minutes until the mixture comes together completely and pulls away from the sides of the bag as one cohesive mass.

  8. Carefully remove the dough from the bag and place it on a lightly floured surface. Knead for about 5 minutes, adding small amounts of flour as needed, until the dough becomes smooth, elastic, and no longer sticky.

  9. Return the kneaded dough to the resealable bag and let it rest undisturbed for 10 minutes.

  10. Remove the dough and shape it either as a round loaf on a greased baking sheet or gently press it into a greased 4 × 8 inch loaf pan.

  11. Cover the shaped dough with a clean kitchen towel or plastic wrap and allow it to rise in a warm spot until it has roughly doubled in bulk, about 45 minutes to 1 hour (timing varies with room temperature).

  12. Preheat your oven to 350 °F. Once the dough has risen, bake for 25–45 minutes (typically about 30 minutes) until the top is golden brown and a toothpick inserted in the center comes out clean.

  13. Remove the bread from the pan (if using one) and place it on a wire rack or clean kitchen towel to cool completely before slicing.
