Ingredients
2½ tablespoons reduced-fat mayonnaise
2½ tablespoons low-fat plain yogurt
2 tablespoons rice vinegar
¾ teaspoon fish sauce
1 tablespoon fresh lime juice
¼ teaspoon cayenne pepper
12-inch baguettes, halved lengthwise
1 pound peeled cooked shrimp, tails removed
18 slices fresh cucumber, thinly sliced
1 large shredded carrot
3 whole scallions, thinly sliced lengthwise and cut into 2-inch pieces
⅓ cup fresh chopped cilantro
Directions
In a small bowl, whisk together the reduced-fat mayonnaise, low-fat plain yogurt, rice vinegar, fish sauce, lime juice, and cayenne pepper until smooth and well combined. Set the aioli aside.
Gently toss the cooked shrimp with half of the prepared aioli and let sit for 5 minutes to allow the flavors to meld.
Spread the remaining aioli generously on the cut surface of each baguette half.
Divide the seasoned shrimp evenly among the six baguette halves, arranging them in a single layer on top of the aioli.
Layer the cucumber slices, shredded carrot, scallion pieces, and fresh cilantro over the shrimp on each sandwich.
Serve immediately while the baguettes are still crisp.
