Ingredients

250 grams Cooked cold rice

100 grams Streaky bacon

1 Egg

1 Scallion, chopped

15 ml Oil for cooking

Directions

  1. Chop the bacon into small bite-sized pieces.

  2. Heat a wok or large skillet over medium-high heat. Once hot and dry, add the chopped bacon and cook, stirring occasionally, until the bacon becomes crispy and golden, about 5–7 minutes.

  3. Transfer the cooked bacon to a clean bowl, reserving as much of the rendered bacon fat in the wok as you prefer (or drain it for later use).

  4. Add the 15 ml of oil to the wok (along with any reserved bacon fat, if desired) and heat until it just begins to smoke.

  5. Add the cold cooked rice to the hot wok and stir constantly and vigorously to break up any clumps and heat through evenly, about 3–4 minutes.

  6. Return the crispy bacon to the wok and stir well to combine with the rice.

  7. Create a small well in the center of the rice mixture and crack the egg directly into it.

  8. Immediately scramble the egg and stir it thoroughly into the rice and bacon until the egg is fully cooked through to 160F and evenly distributed, about 1–2 minutes.

  9. Add the chopped scallion and toss everything together until well combined.

  10. Divide into a serving bowl and serve immediately while hot.
