Ingredients
1 box German chocolate cake mix
1/3 cup vegetable oil
2 large eggs
1 jar caramel (10–12 oz.)
2/3 cup coconut flakes
2/3 cup chopped pecans
Sea salt to taste (optional)
Directions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the chocolate cake mix, vegetable oil, and eggs. Stir until just combined into a thick batter.
In a separate small bowl, mix the caramel, coconut flakes, and chopped pecans until well blended.
Drop rounded teaspoons of the chocolate batter onto ungreased baking sheets, spacing them about 1 inch apart.
Top each chocolate batter drop with about 1/2 teaspoon of the caramel-coconut-pecan mixture, pressing it gently into the batter.
Bake for 10–12 minutes, until the cookies are set but still slightly soft.
Remove from the oven and let cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely. Sprinkle lightly with sea salt if desired.
