Ingredients
4 medium sweet potatoes
3/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions
Wash your hands thoroughly with soap and water before beginning preparation.
Rinse the sweet potatoes under cool running water, scrubbing gently to remove any dirt. Peel away the skin using a vegetable peeler or knife.
Cut the peeled sweet potatoes into approximately 3/4-inch thick slices.
Transfer the potato slices to a saucepan and add enough cold water to cover them completely.
Place the saucepan over medium heat and bring the water to a rolling boil.
Once boiling, maintain a steady simmer and cook the potatoes for 20 to 25 minutes until they are very soft and easily pierced with a fork.
Carefully drain all the water from the potatoes using a colander or by pouring off the liquid while keeping the potatoes in the pan.
Transfer the drained sweet potatoes to a medium mixing bowl.
Using a potato masher or fork, mash the potatoes until you reach your desired consistency—smooth or with small chunks, as you prefer.
Add the dried thyme, salt, and black pepper. Stir well to distribute the seasonings evenly throughout the mashed potatoes.
