6 ounces bittersweet chocolate, finely chopped

1/3 cup whole milk

1 large egg yolk

4 large egg whites

2 tablespoons sugar

Directions

  1. Place the chopped bittersweet chocolate in a heatproof bowl. Heat the milk in a small saucepan until steaming but not boiling. Pour the hot milk over the chocolate and let it sit for 1-2 minutes, then stir until the chocolate is completely melted and smooth.

  2. Allow the chocolate mixture to cool to room temperature, about 5 minutes. Add the egg yolk to the melted chocolate and stir well to combine.
