Ingredients
6 ounces bittersweet chocolate, finely chopped
1/3 cup whole milk
1 large egg yolk
4 large egg whites
2 tablespoons sugar
Directions
Place the chopped bittersweet chocolate in a heatproof bowl. Heat the milk in a small saucepan until steaming but not boiling. Pour the hot milk over the chocolate and let it sit for 1-2 minutes, then stir until the chocolate is completely melted and smooth.
Allow the chocolate mixture to cool to room temperature, about 5 minutes. Add the egg yolk to the melted chocolate and stir well to combine.
In a separate, scrupulously clean bowl, whip the egg whites with an electric mixer on medium-high speed until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form and the mixture is glossy.
Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then fold in the remaining egg whites in two additions, stirring as little as possible to maintain the airiness of the mousse.
Divide the mousse into serving glasses or bowls and refrigerate for at least 2 hours before serving.
