Ingredients

¾ cup Fresh bread crumbs

5 tablespoons Extra virgin olive oil

1½ tablespoons Red wine vinegar

Anchovy fillets, chopped

1 Large shallot, minced

Salt and freshly ground black pepper

2 Medium heads radicchio

2 Hard-boiled eggs, peeled

Directions

  1. Heat 2 tablespoons of the extra virgin olive oil in a large skillet over medium heat. Once shimmering, add the fresh bread crumbs and toast, stirring frequently, for 3 to 4 minutes until golden and fragrant. Season lightly with salt and pepper, then transfer to a plate and set aside.

  2. In a small bowl, whisk together the minced shallot and chopped anchovy fillets. Add the red wine vinegar and stir to combine. Slowly whisk in the remaining 3 tablespoons of extra virgin olive oil until emulsified. Taste and adjust seasoning with salt and freshly ground black pepper as needed.

  3. Remove the outer leaves from the radicchio heads and discard any that are wilted or damaged. Cut the heads in half lengthwise, then slice thinly into 1/4-inch-wide ribbons. Place the radicchio in a large serving bowl.

  4. Pour the vinaigrette over the radicchio and toss gently but thoroughly to coat all the leaves evenly. Allow to sit for 1 to 2 minutes so the radicchio softens slightly.

  5. Cut the hard-boiled eggs into quarters or rough chunks and scatter them over the salad. Sprinkle the toasted bread crumbs generously on top. Serve immediately while the bread crumbs are still warm and crispy.
