2½ quarts Water

3 cups Kosher salt

12 eggs Duck eggs

Directions

  1. In a large pot, bring the water to a boil over high heat. Add the kosher salt and stir constantly until the salt is completely dissolved, creating a saturated brine solution.

  2. Remove the brine from heat and allow it to cool completely to room temperature. This typically takes about 1–2 hours.

  3. Gently place the duck eggs into a clean glass jar or container. Pour the cooled brine over the eggs, ensuring they are fully submerged. Use a weight if necessary to keep them underwater.

  4. Cover the jar loosely with a lid or cloth and leave at room temperature away from direct sunlight. Allow the eggs to cure for 3–4 weeks, during which the salt will penetrate the shells and preserve the eggs while developing their characteristic flavor and texture.

  5. After the curing period, remove eggs as needed, rinse under cool water, and boil in fresh water for 10–12 minutes until fully cooked. The yolks should be deep amber and creamy, with a distinct salty taste.
