Four-Pasta Beef Bake

Ingredients
8 cups uncooked pasta (4 different shapes such as rigatoni, penne, bow ties, and elbow)
2 pounds ground beef
2 medium green bell peppers, chopped
2 medium onions, chopped
2 cups sliced fresh mushrooms
104 ounces Four 26-ounce jars meatless spaghetti sauce
2 large eggs, lightly beaten
4 cups shredded mozzarella cheese
Directions
Bring a large pot of salted water to a boil and add the 8 cups of mixed pasta shapes. Cook according to package directions until al dente, stirring occasionally. Meanwhile, heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until no longer pink, about 8 to 10 minutes. Add the chopped green peppers, onions, and sliced mushrooms; continue cooking until the vegetables soften, about 5 to 7 minutes. Drain any excess fat from the skillet.
Preheat your oven to 350°F. When the pasta is done, drain it thoroughly and transfer to a large mixing bowl.
Add the cooked beef and vegetable mixture to the drained pasta. Pour in 2 of the 4 jars of spaghetti sauce and stir in the lightly beaten eggs. Mix gently until everything is well combined.
Divide the pasta-beef mixture evenly between two greased 13 by 9 by 2-inch baking dishes. Pour the remaining 2 jars of spaghetti sauce over the top of each dish, spreading evenly.
Sprinkle the shredded mozzarella cheese evenly over the sauce in both dishes. Bake, uncovered, for 25 to 30 minutes or until the mixture is heated through and the cheese is melted and lightly golden. Internal temperature should reach 160°F when measured with a thermometer in the center of the casserole (ensuring ground beef has been brought to safe temperature and eggs are fully cooked).
