Grilled Mahi Mahi with Infused Butter

Ingredients
¼ cup Butter, melted or softened
4 fillets (5 to 8 oz each) Mahi mahi fillets
1 tablespoon Fresh lemon juice
¼ teaspoon Onion powder
½ teaspoon Salt
2 to 3 tablespoons Fresh herbs (such as parsley or dill), finely chopped
Directions
In a small bowl, combine the melted butter, fresh lemon juice, onion powder, and salt. Stir in the finely chopped fresh herbs until well mixed. Divide the mixture in half, reserving one half to finish the fish after cooking.
Pat the mahi mahi fillets dry with paper towels. Lightly brush the first side of each fillet with the butter mixture.
To broil: Position the oven rack 5 to 6 inches below the broiler element. Place the buttered fillets skin-side up on a foil-lined baking sheet. Broil for 6 to 8 minutes until the flesh is opaque and flakes easily when tested with a fork (internal temperature should reach 145°F).
Carefully flip the fillets. Brush the second side with the remaining prepared butter mixture. Return to the broiler for 6 to 8 minutes more until fully cooked through.
Alternatively, to grill: Lightly oil the grill grates and preheat to medium-high heat. Place fillets skin-side down and brush the exposed flesh with butter mixture. Grill for 6 to 8 minutes. Flip carefully, brush the new side with butter mixture, and grill for 6 to 8 minutes more until the flesh is opaque and reaches 145°F internally.
Transfer the cooked fish to a serving platter. Brush each fillet generously with the reserved herb butter mixture.
Serve immediately alongside rice or couscous.
