Ingredients
4 cups rolled oats
⅜ cups shredded coconut
1 cup raw sunflower seeds
⅜ cup sesame seeds
1 cup raw almonds and/or walnuts, roughly chopped
1 cup honey
½ cup canola oil
1 tablespoon ground cinnamon
1 cup raisins or dried cranberries (optional)
Directions
Preheat your oven to 325°F (160°C). Line two large baking sheets with parchment paper.
In a large mixing bowl, combine the rolled oats, shredded coconut, sunflower seeds, sesame seeds, and chopped nuts. Stir well to distribute the ingredients evenly.
In a separate small bowl, whisk together the honey, canola oil, and ground cinnamon until well combined and smooth.
Pour the honey mixture over the dry ingredients and mix thoroughly with a wooden spoon or your hands until every piece is coated with the honey-oil mixture. Ensure there are no dry pockets.
Spread the mixture evenly across both prepared baking sheets in a thin layer, breaking up any clumps as you go.
Bake for 18-22 minutes, stirring the mixture halfway through baking, until the muesli is golden brown and fragrant. Watch carefully to prevent burning.
Remove from the oven and spread the muesli on a clean surface or fresh parchment paper to cool completely. It will continue to crisp as it cools.
Once fully cooled, stir in the raisins or dried cranberries if using. Store in an airtight container for up to two weeks.
