Ingredients

320 g Puff pastry sheet

100 g Soft goat's cheese, diced

125 g Mascarpone cheese

1 large Large egg

100 g Fresh blackberries

1 tbsp Fresh thyme leaves, plus 3 whole sprigs for decoration

Salt

Black pepper

Directions

  1. Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper and set aside.

  2. In a mixing bowl, combine the mascarpone cheese, diced goat's cheese, and egg. Season generously with salt and black pepper, then stir until well blended. The mixture may remain slightly lumpy depending on the texture of your goat's cheese, which is perfectly normal. Set aside.

  3. Roll out the puff pastry on a lightly floured work surface until it reaches approximately 14 by 10 inches, then transfer it to the prepared baking tray.

  4. Spread the mascarpone mixture evenly over the pastry using the back of a spoon, leaving a small border around all edges of the pastry.

  5. Scatter the fresh thyme leaves over the cheese mixture. If desired, arrange the 3 whole thyme sprigs on top for visual decoration (note: these will likely need to be removed before serving).

  6. Cut each blackberry in half lengthwise. Arrange the blackberry halves cut-side down across the top of the tart, spacing them evenly.

  7. Add a final pinch of salt and pepper to the surface if desired. Bake for 20 to 25 minutes, until the pastry is golden brown and puffy and the cheese filling has set completely. Watch carefully during the final minutes of baking, as the pastry colors quickly. Remove from the oven and serve warm or at room temperature.

Puff pastry, goat's cheese, and mascarpone are available at all major Charlotte chains, and blackberries freeze well year-round, making this accessible without special trips. The stated 40 minutes is honest if you buy thawed puff pastry and work efficiently, though rolling, filling, and baking do demand attention throughout. At roughly $2.50 per serving, the tart is moderately priced for a dinner or dessert course, with goat's cheese being the main cost driver. This is a showstopper for dinner guests and reheats adequately, but it's fussy enough that it's not a casual weeknight throw-together—budget it for when you have focus and a little time.
