Ingredients
1/4 small red onion, very thinly sliced
2 ripe peaches, quartered and very thinly sliced
1 tablespoon honey
1 tablespoon fresh lemon juice
1/8 teaspoon cayenne pepper
Coarse salt to taste
Ground black pepper to taste
4 bone-in pork chops, 10 to 12 ounces each
Directions
Prepare the relish by combining the thinly sliced red onion, peach slices, honey, fresh lemon juice, and cayenne pepper in a small bowl. Gently toss to combine and set aside at room temperature while you prepare the pork chops.
Preheat your grill to medium-high heat, about 400°F.
Pat the pork chops dry with paper towels. Season both sides generously with coarse salt and ground black pepper.
Place the pork chops on the preheated grill and cook for 6 to 8 minutes per side, until the internal temperature reaches 145°F when measured with an instant-read thermometer inserted into the thickest part of the meat away from the bone.
Transfer the grilled pork chops to a serving platter and let rest for 2 to 3 minutes. Taste the relish and adjust seasonings with additional salt and pepper as needed.
Spoon the peach and red onion relish over each pork chop and serve immediately while warm.
