Ingredients

1/4 small red onion, very thinly sliced

2 ripe peaches, quartered and very thinly sliced

1 tablespoon honey

1 tablespoon fresh lemon juice

1/8 teaspoon cayenne pepper

Coarse salt to taste

Ground black pepper to taste

4 bone-in pork chops, 10 to 12 ounces each

Directions

  1. Prepare the relish by combining the thinly sliced red onion, peach slices, honey, fresh lemon juice, and cayenne pepper in a small bowl. Gently toss to combine and set aside at room temperature while you prepare the pork chops.

  2. Preheat your grill to medium-high heat, about 400°F.

  3. Pat the pork chops dry with paper towels. Season both sides generously with coarse salt and ground black pepper.

  4. Place the pork chops on the preheated grill and cook for 6 to 8 minutes per side, until the internal temperature reaches 145°F when measured with an instant-read thermometer inserted into the thickest part of the meat away from the bone.

  5. Transfer the grilled pork chops to a serving platter and let rest for 2 to 3 minutes. Taste the relish and adjust seasonings with additional salt and pepper as needed.

  6. Spoon the peach and red onion relish over each pork chop and serve immediately while warm.
