Ingredients
1 medium apple (such as Red Delicious)
1 teaspoon unsalted butter
1 teaspoon brown sugar, optional
1/8 teaspoon ground cinnamon
1/3 cup muesli
1/3 cup vanilla Greek yogurt
Directions
Preheat your oven to 350°F. While the oven heats, carefully slice the apple in half lengthwise. Using a melon baller or small spoon, scoop out the core and some of the flesh around it from each half, creating a small cavity.
Divide the butter between the two apple halves, rubbing it evenly across the cut surfaces and inside the cavity. Sprinkle the brown sugar and cinnamon over the buttered apples.
Top each apple half generously with the muesli, pressing gently so it adheres to the butter. Place the apples cut-side up on a baking sheet.
Bake for 30 minutes, until the apples are tender but still hold their shape, and the muesli topping is golden and fragrant.
Remove from the oven and transfer to serving plates. Top each baked apple with a dollop of Greek yogurt and serve immediately while warm.
