6 skinless salmon fillets (6 ounces each, about 1 to 1 1/4 inches thick)

Extra-virgin olive oil

Sea salt to taste

Directions

  1. Preheat a barbecue grill to high heat (about 450–500°F). Toast fennel seeds and coriander seeds in a small skillet over medium heat for 1–2 minutes, stirring occasionally, until fragrant.   2. Pat salmon fillets dry with paper towels. Brush both sides generously with extra-virgin olive oil.
