Ingredients
1 lb. baked ham, cut into 1 inch chunks
8 gherkins, diced
1 pickled jalapeño, minced
1/2 cup mayonnaise
2 tbsp. Dijon mustard
2 tbsp. finely chopped fresh parsley
3 scallions, thinly sliced
2 ribs celery, sliced crosswise into thin pieces
1/2 red onion, finely chopped
Kosher salt and freshly ground black pepper, to taste
Directions
In a large mixing bowl, combine the mayonnaise and Dijon mustard, stirring until smooth and well blended.
Add the chunks of baked ham to the dressing and toss gently to coat.
Fold in the diced gherkins and minced pickled jalapeño, mixing gently.
Add the sliced scallions, sliced celery, chopped red onion, and fresh parsley to the bowl.
Toss all ingredients together until evenly combined and the vegetables are well distributed throughout.
Season to taste with kosher salt and freshly ground black pepper, adjusting as needed.
Serve immediately or refrigerate until ready to serve. This salad is excellent on its own, with crackers, or on bread.
